Broccoli Soup
Throughout my healing journey, soups have been a staple. I love how versatile they are and how one little bowl is jam packed with nutrients that fuel my body throughout the day. Whether warm or cold, soups have a way of filling your heart, kinda like a hug in a bowl ♥
Broccoli is considered a superfood with a vast catalog of nutrients and antioxidants.
Some of it’s health benefits include;
- tons of folic acid that helps with hair growth
- packed with vitamin k for blood clotting and blood coagulation
- has a high calcium content that helps develop strong bones and teeth
- contains selenium for thyroid metabolism and regulating chest congestion
- magnesium for stress relief and estrogen metabolism making it a lovely meal option during ones cycle
- the dietary fiber found in broccoli supports digestion
This easy recipe contains no dairy and I love to serve it with toasty bread
- 2 heads broccoli
- 1 large potato
- 1 onion
- 1 cup water
- a lot of garlic
- black pepper
- salt
- chili (optional)
Directions
- Blanch the broccoli florets in boiling water for about 15 minutes
- Into a pan, add olive oil and sauté the onions and garlic
- Add the broccoli florets and leave to caramelize in high heat for about 10 minutes. Make sure not to overcook the broccoli
- Taste for salt and black pepper
- In a different pot, boil the potato
