Sweet Potato Burger

You’ll need:

For the patties –

  • 2 large sweet potatoes, boiled or roasted
  • 5 teaspoons of plain all purpose flour
  • 1 teaspoon of corn starch
  • Fresh or dried oregano
  • Fresh thyme
  • Chili flakes
  • Black pepper
  • Coriander powder
  • Garlic powder
  • Salt

For the sauce –

  • 3 tablespoons of ketchup
  • 1 tablespoon white wine vinegar
  • Half a cup of ripe pineapples juiced
  • 1 tablespoon brown sugar
  • Chili flakes

To garnish –

  • 2 white onions
  • Lettuce
  • 1 tomato
  • 1 pink radish
  • Avocado (optional)

Instructions

  • Boil or roast the sweet potato until completely cooked through then allow to cool
  • Mash the sweet potatoes
  • Into a bowl, combine the sweet potato, flour, spices, corn starch and stir to combine
  • Roll out the patties and leave in the fridge for 10 minutes
  • Meanwhile in a pan combine the pineapple juice, chili, ketchup, brown sugar and white wine vinegar (taste to balance) stir slowly over medium heat making sure the sugar doesn’t burn. Reduce the mixture until it forms a thick sauce
  • In the same pan, fry the onions until translucent
  • Heat the oil over medium heat and lightly fry the patties until golden (for a better taste experience try frying the patties until crispy)
  • Assemble your desired toppings

Dust the patties with flour to prevent stickiness
