Onion Jam
It’s no secret, I love onions. Pickled, charred, sautéed, caramelized. As long as it’s cooked, prolly has my name on it. Onions have a subtle luxury to them making them a staple ingredient in any recipe.
My most recent experiment, onion jam. This sweet, rich, caramelized goodness is simple to make and delivers incredible flavor with each savory bite. Elevates your ordinary sandwiches and meaty dishes to something divine. Just ask my friends!
The best part, you don’t need any fancy equipment or ingredients to make it.
- 10 white onions sliced
- 2 tbs cooking oil of choice
- 2 tbs brown sugar
- ¾ cup red wine vinegar
- Fresh thyme
- black pepper
- salt
Directions
- Put oil and onions in a large pan. Cook over medium-high heat stirring only occasionally; cook until golden.
- Add sugar, thyme, salt, pepper and red wine vinegar and cook until thickened and somewhat syrup-y.
- Leave them to cool before transferring into an airtight container. Store in the refrigerator up to a week.
- Remember to sterilize the container in a hot water and vinegar bath.
