Chickpea Sandwich

This recipe is everything I didn’t know I needed, until I did!

The perfect protein packed recipe for when you need to juj up your breakfast.

You’ll need:

  • 1 cup of chickpeas
  • 1 red onion diced
  • Olive oil
  • Juice of 1/2 lemon
  • Lemon zest
  • 1 celery stick diced
  • Red bell pepper diced
  • Cucumber slices
  • Chili flakes
  • Salt and pepper to taste

Directions

  1. Into a blender, add chickpeas, olive oil and some warm water and blend slightly leaving chunky bits
  2. Into a mixing bowl, add the chickpea paste, red onion, red pepper, celery, garlic powder, chili flakes, salt, pepper, lemon zest and mix it up
  3. Add the lemon juice in bits while tasting the mixture to ensure everything is well balanced
  4. To assemble your sandwich, toast the bread with butter. Top with the cucumber slices and then add the paste. If you fancy some lettuce, you can add it to the sandwich.
  5. Enjoy!
