Beans on Toast.
For the first time in about 17 years, I had beans! And I liked them.
Despite my efforts over the years to soak grains to help reduce phytic acids and improve overall absorption, I’ve always ended up a victim of uncomfortable bloating and tummy distension. So when my dad introduced me to these yellow beans and vowed I’d enjoy them, I had to call his bluff.
I dare say he was right.
Recipe:
You’ll need:
- 1 cup of yellow beans (pre-boiled)
- 1 red onion
- Olive oil
- A squeeze of lemon juice
- White vinegar
- Oregano + Fresh Thyme
- Sesame seeds
- Avocado
- Chicken masala
- Chili flakes
- Salt and pepper to taste
Directions
- Into a pan, add olive oil and your red onions. Cook until slightly soft then add a tablespoon of white vinegar
- Once it’s cooked down, add your yellow beans and chicken masala and let it simmer for about 4 – 5 minutes
- Into a mixing bowl, add the yellow beans, fresh thyme, oregano, chili flakes, salt, pepper, salt and mix it up
- Add the lemon juice in bits while tasting the mixture to ensure everything is well balanced
- For your avocado, mash it in a bowl adding in some lemon juice and salt
- Toast your bread to your preference
- Spread avocado on the toast, add your beans and sesame seeds
- Enjoy!
