Broccoli Soup

Throughout my healing journey, soups have been a staple. I love how versatile they are and how one little bowl is jam packed with nutrients that fuel my body throughout the day. Whether warm or cold, soups have a way of filling your heart, kinda like a hug in a bowl ♥

Broccoli is considered a superfood with a vast catalog of nutrients and antioxidants.

Some of it’s health benefits include;

  • tons of folic acid that helps with hair growth
  • packed with vitamin k for blood clotting and blood coagulation
  • has a high calcium content that helps develop strong bones and teeth
  • contains selenium for thyroid metabolism and regulating chest congestion
  • magnesium for stress relief and estrogen metabolism making it a lovely meal option during ones cycle
  • the dietary fiber found in broccoli supports digestion

This easy recipe contains no dairy and I love to serve it with toasty bread

  • 2 heads broccoli
  • 1 large potato
  • 1 onion
  • 1 cup water
  • a lot of garlic
  • black pepper
  • salt
  • chili (optional)

Directions

  • Blanch the broccoli florets in boiling water for about 15 minutes
  • Into a pan, add olive oil and sauté the onions and garlic
  • Add the broccoli florets and leave to caramelize in high heat for about 10 minutes. Make sure not to overcook the broccoli
  • Taste for salt and black pepper
  • In a different pot, boil the potato
  • Once the potato is cooked, blend the ingredients together and keep tasting to balance the salt and black pepper
  • Serve with toasted bread bits.
