Chickpea Sandwich
This recipe is everything I didn’t know I needed, until I did!
The perfect protein packed recipe for when you need to juj up your breakfast.
You’ll need:
- 1 cup of chickpeas
- 1 red onion diced
- Olive oil
- Juice of 1/2 lemon
- Lemon zest
- 1 celery stick diced
- Red bell pepper diced
- Cucumber slices
- Chili flakes
- Salt and pepper to taste
Directions
- Into a blender, add chickpeas, olive oil and some warm water and blend slightly leaving chunky bits
- Into a mixing bowl, add the chickpea paste, red onion, red pepper, celery, garlic powder, chili flakes, salt, pepper, lemon zest and mix it up
- Add the lemon juice in bits while tasting the mixture to ensure everything is well balanced
- To assemble your sandwich, toast the bread with butter. Top with the cucumber slices and then add the paste. If you fancy some lettuce, you can add it to the sandwich.
